Copi® fish demonstrations featured at the Illinois Products Expo

SPRINGFIELD - Copi®, the consumer food brand for invasive carp, will be one of the many delicious food offerings at the Illinois Products Expo at the Illinois State Fairgrounds March 1-2.

Expo visitors will be able to enjoy delicious Copi® tacos, Copi® chili, and Copi® poke bowls from award-winning chef Maurice Jackson, the head chef and partner at Bar19 in the Wrigleyville neighborhood of Chicago.

Copi® demonstrations and offerings will be at 11:30 a.m., 1:30 p.m., and 3:30 p.m. Saturday and 11:30 a.m. and 1:30 p.m. Sunday.

In addition, any Expo visitors who wish to discuss offering Copi® in their retail establishments or on their restaurant menus will be able to speak with Tony Chavarria, who is supporting Copi® business development. Information also will be available about where consumers can buy Copi® currently.

The Illinois Department of Natural Resources (IDNR) has led the rebranding of invasive carp to combat public misconceptions about the fish and increase consumer interest in this healthful, delicious, top-feeding protein source. The Copi® brand launched in June 2022, generated regional, national, and international attention. Illinois processors have reported doubling their sales since the launch, and nationwide online sales are now available.

Copi® are mild, clean-tasting fish with heart-healthy omega-3s are very high in protein. Increased consumption will help to stop them from decimating other fish populations in the Great Lakes and restore an ecological balance to waterways downstream.
